Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!

Very good class. Learned some good cutting techniques and the meal we helped prepare was very good. However, I was hoping to learn more about knife care and maintenance than was presented. He provided a good foundation but I guess I was looking for something a bit more advanced.

I attended the course with my son. Chef really took the time to work with each one of us. We picked up new skills as well as fine tuned the ones we already had. We also learned there is no need for oil when roasting. What a revelation! Of course we had a delicious meal at the end…the fruits of our labor lol. We had a great time. I would recommend this class to any level cook.

Great space and great instructor but it was a very beginner cooking class with not a lot of actual knife skills/technique work. For a three hour class we only cut a handful of items and we finished very early. Also we had no part in preparing/cooking the Cornish Hens, the main item of the dish we cooked as a class. I also found it odd to be using Pepperidge Farms puff pastry and calling it dessert. I had a good time, just was hoping to get a little more confident with my knife skills.

Chef Paul was fantastic. Not only was the knife instruction top notch, but he took the time to fully explain the processes we were employing to make an entire meal. I never guessed making dinner for 14 could be so easy and fun! Cant wait to put my new skills and knowledge to the test in my own kitchen! Ill definitely be back for another class with Chef Paul

Paul was an excellent instructor. He took his time explaining all processes and answering questions. Focused on the “why’s not just the “how’s”. The facility was clean and well appointed. I’m looking forward to taking another class at Miette with Paul.

Directions:
There are 2 entrances located between Umbertos Clam House. One is to the left if facing the restaurant and that is 1 flight up the stairs you will need to press 11 then the green bell key and wait to be buzzed in. The other is to the right of the restaurant that is a black street level elevator and just press the elevator button to gain access and go to the 2nd floor. There is also an intercom system there as well in case the elevator is locked. Closest Train stations are: B,D at Grand Street,N, R, J, Q, 6 at Canal Street. Parking is available on Elizabeth & Mott between Hester and Canal Street.
