Students can enjoy charcuterie upon arrival and a family-style dinner halfway through the class, all while learning to butcher a whole hog, head to tail. BYOB is highly encouraged for this class and each student will take some a selection of Revival salumi.

This Culinary Core Cooking Course will help you establish all the basic skills you’ll need to prep and cook your prime cuts. Spanning over five weeks, each session will focus on specific skills that build upon what was learned in the previous week. You’ll master knife skills and learn to prep and cook poultry, pork, and beef.

A nod to the barbecue culture of Texas, RibsU will teach you everything you need to know to make award-winning ribs. Led by experienced pit masters at Brisket U in Greater Heights, you’ll learn about Texas pits, types of ribs, trimming techniques, rubs and prep, wood selection, smoke profiles, timing the cook, and slicing the perfect rib.

Ideal for your next romantic evening, Sur La Table in River Oaks hosts Date Night: Great Steak Dinner. You and your partner will learn to caramelize a shallot, make a warm vinaigrette, and sear a steak in a cast iron pan. This class emphasizes techniques over recipes so that you have a strong set of skills that can be applied to many dishes.

Virtual Butchery Classes

Similarly, Virtual Building Blocks: Fish Butchery and Cookery is also offered by The Chopping Block Lincoln Square. This class will cover selecting fish, identifying flat and round fish, techniques for breaking down a whole fish, and various cooking methods. It is also hosted via Zoom and a moderator will make sure that all your questions are answered by the chef either during or after class.
