Apollonia Poilâne 

Apollonia Poilâne, the 33-year-old CEO of Poilâne, is the third-generation baker to run the bakery. She has been baking at Poilâne since she was a teenage apprentice. The bakery was founded in 1932 by her grandfather and developed both in France and internationally by her father, Lionel. Besides supplying the Élysée Palace and 2,000 Parisian restaurants with bread, Poilâne ships to 40 countries daily. 


Melissa Clark 

Melissa Clark is an award-winning food writer, cookbook author and New York Times food columnist. She writes about cuisine and other products of appetite. She earned an M.F.A. in writing from Columbia University. She’s won two James Beard Foundation awards and two IACP awards (International Association of Culinary Professionals), and her work has also been selected for the Best American Food Writing series. In 2012 she joined the staff of the New York Times, where she writes the highly popular Food Section column, A Good Appetite. In addition, she hosts a podcast, The Weeknight Kitchen, for the Public Radio International radio show, The Splendid Table. She is a frequent guest on NBC’s The Today Show and The Rachel Ray Show, and is a regular guest host on All of It with Alison Stewart on WNYC. In addition, Clark has written 42 cookbooks, including Dinner: Changing the Game, and Dinner in an Instant. Her forthcoming cookbook, Dinner In French, explores French cuisine with her characteristic Brooklyn je ne sais quoi.
