What you'll learn in this culinary class:

Cooking 101. A 4-Part Cooking Course w/Chef Joanna Barajas

This class is designed to provide beginner cooking classes for the cook with little or no cooking experience. Professionally trained chef, Joanna takes you through the most celebrated cuisines in LA in this series: Mediterranean, Asian, Mexican, and Italian. 

This class is best for a flexitarian, but vegetarians and vegan diets can be accommodated well! We’ll start with knife skills, learn sauces, different cooking methods, and by the end, you will have the skills needed to be able to host your own dinner party and each class includes a glass of wine with your meal.

We’ll go over health and safety, time management, planning the week, and making Instagramm-able meals. 

This class meets once per week over a 4-week period.

In these 4 weeks the focus is to get you confident in:

  • Cooking Chicken 
  • Cooking Steak and how to prepare different cuts of meat 
  • Roasting Vegetables 
  • Using leftovers so you don’t feel like you’re eating leftovers 
  • Making sauces with what you have on hand 
  • Balancing flavors with less salt and less fat
  • Focusing on small ingredient lists- 10 ingredients or less 
  • Essential knife skills 
  • Easy-to-prepare recipes 
  • Basic cooking techniques

INDIVIDUAL CLASS DETAIL 

Class #1: Introduction- Knife Skills and Basic Saute 

Learn the difference between chop, slice, dice, and mince. Reading recipes will become more clear to you now after learning these terms. What vegetables can you pre-chop or buy already chopped? We’ll also go over the fastest cooking method in the kitchen- saute. 

{Mediterranean}

  • Balsamic Glazed Vegetable Pita Pockets 
  • Chicken Shish Kebab with Green Goddess Sauce 
  • Farmer’s Market Salad with Carrots, Cranberries, and Ras El Hanout spice

  • Smashed Potatoes 

Class #2: Mise en Place/Meal Prep

Learn about organization and planning.
 

From the start of making your grocery lists, you’ll become better at saving time and organizing yourself so the kitchen feels like the place of calm you crave. 

{Mexican/Latin} 

  • Fajitas Bowl with Chicken 
  • Guacamole Carnivale 
  • Pico de Gallo Salsa 
  • Chile Rellenos with Quinoa 
  • Steak with Chimichurri (or Portobello) 
  • Roasted Pepita Caesar Salad (Vegan)

  • Lighter Refried Beans 

Class #3: Homemade Pasta, Sauces and Starches

There is nothing better than homemade pasta and bread. This class is a celebration of these most popular dishes! Better yet, we’ll be using only the best, fresh-milled flours that King’s Roost has to offer. 

You can traverse the US to find a class like this, but you won’t find it! Consider yourself lucky to get a fresh whole-grain class. Even people with gluten sensitivities can usually indulge in these grains without the side effects of processed flours.

{Italian} 

  • Flatbread Pizza 
  • Bolognese Tagliatelle 
  • Classic Lasagna for Dinner Parties 
  • Chicken Parmesan 
  • Ravioli with Spinach and Ricotta 
  • Dairy-free Pesto 
  • Eggplant Rollatini 

Class 4: Fish and Shellfish meals 

This final class goes over health and safety in the kitchen. We’ll go over fish, sometimes the hardest thing to cook- will no longer be a mystery to you. We’ll finish this series with a beautifully plated meal and chat together with your new friends. Bring a bottle of your favorite wine to this class. Recipes include:

  • Asian chicken skewers with spicy peanut sauce 
  • Sesame Crusted Seared ahi tuna with ginger dressing 
  • Fresh Spring Rolls with Shrimp 
  • Thai Salad with Rice Noodles 
  • Steamed Fish with Ginger, Green Onion and Soy Sauce 
  • Chinese Dumplings
  •  Mango Chicken
    Fired Green Beans

Note: 

This is a four part class. It is $500 for ALL 4 PARTS, or $150 per class if you wish to participate in the classes "a-la-carte."

Refund Policy

Cancellations made at least 2 business days in advance of the class will be honored with a full refund less 5% cancellation fee. No refund after that.
